20-MILE SEASONAL MENUS

Our menus celebrate the very best of the season. Here on the Worcestershire/Herefordshire border, we're lucky to be surrounded by some of the finest food and drink producers in the region and are proud to champion their award-winning ingredients. What we can't grow or produce ourselves, we aim to source from within a 20-mile radius.

KITCHEN GARDEN & HOME FARM

Our menus are home-grown, and seasonal – what's at its bountiful best in the kitchen garden; Hereford beef from the Holloways home farm; wild venison and pheasant from the woods and culinary treasures like elderflower and wild garlic foraged from the surrounding fields and hedgerows.

At the heart of the kitchen garden is a productive polytunnel supplying the kitchen year-round. In summer, heritage salad crops, juicy tomatoes, Swiss chard and courgettes are in abundance. Autumn brings squash, beetroot and root vegetables, while the hedgerows yield plums and blackberries. Winter offers sloes, picked after the first frost for puddings and gin, while the raised beds are bursting with leeks and kale. In spring, we forage the banks of the brook for wild garlic, which we turn into delicious pestos, soups and sauces.

Over on the farm, our pedigree herd of Herefords overwinter in airy barns. Come spring, the mothers and their calves are turned out on the rich pastures surrounding our showrooms. The meat from these magnificent beasts is always front and centre of our menus, from delicious burgers to hearty pies and full-of-flavour summer salads.
