Anthony Legge puts his passion for pies and provenance to spectacular use at his deli and butcher’s shop in Bromyard.
He would never admit he’s doing anything special, but a browse around Legges suggests otherwise. From five generations of Herefordshire farmers and a butcher by trade, burly Anthony opened the door of Legges of Bromyard in 2000 as an alternative to the big supermarkets. Bromyard born and bred, Anthony wanted to give something back to his hometown when he finished his butcher’s training. People in rural communities have been brought up to care about provenance and buying locally is the norm.
‘Here in Herefordshire you’ve got farmers and you’ve got our shop, and there is nothing in-between,’ he says proudly. ‘We can be honest about what we are selling’.
Anthony is still proudly at the helm, and in his shop every day, stocking his shelves with delicious wares from over fifty suppliers in Herefordshire alone, cooking up new ideas in the on-site kitchens, and exploring new meats and new potential. ‘I wake up with ideas for a pie recipe in the morning and when I go and tell the kitchen they gave a funny little smile and agree with me. As soon as I walk out I can hear them laughing,’ said Anthony.
Some of his staff have worked with him for over 10 years and are used to his new and sometimes unusual ideas, he admitted. However, he knows what he is doing and Legges’ handcrafted pies are being shipped to every corner of Britain.
Everyone that passes through the door of Legges is met with the same generosity. Whether it is giving advice to a customer about how to tackle an unfamiliar cut of meat, or training up fledgling butchers and cooks at the back of the shop – all of whom come to Legges with no experience – Anthony strives to serve. As he says, it’s more about a lifestyle than the product.

His passion for local produce has not gone unnoticed and the word is spreading. You may have seen Legges featured in Farmers Weekly, Shooting Times, Great British Food, BBC Countryfile, The Independent and The Sunday Times. They were awarded Best Deli in the Midlands in 2015 Good Food Awards.
Every day Legges meat features on The Glasshouse menu. We make all our own dishes, including our own meat pies, but the one exception is Legges Pork Pie which cannot be surpassed. One of the perennial favourites on our menu is Lower Court Butcher’s Lunch – Legges baked ham, traditional Legges pork pie and Stilton, (also supplied by Legges), served with homemade pickles, coleslaw, celery, apple and bread rolls.
